Needless to say, when we got home I wanted to make something light and clean. I opted for a fresh summer salad and whitefish. Our grocer had some lovely wild caught seafood on sale, so I stocked up and added lots of fresh fruits and veggies.
This salad is one that could be eaten plain or as a part of a main dish like I made it. It would also pair nicely with salmon or chicken.
For the tilapia, I just rubbed with a little EVOO, salt and pepper and baked at 350 for about 15 minutes.
Assemble on a plate and enjoy!
