Despite the warmer temps, my calendar is filling up with holiday parties and dates to meet girlfriends for holiday cocktails. My spare bedroom is full of gifts to be wrapped (although I've yet to make a real dent in my list), and my credit card bills are higher than normal.
'Tis the Season.
While this isn't the healthiest dish I've ever posted, you can probably only handle eating 2 or 3 before you call it quits. Since you're not likely to over-do it on these, I thought I'd help you out with a simple, but decadent, holiday appetizer.
These tasty treats are a perfect combination of sweet and salty (and spicy if you use the peppercorn crusted bacon like I did...YUM!)
Bacon Wrapped Dates
makes 30 small bites
30 medjool dates, pitted
your favorite block of cheese, cubed (I used a declicious smoked gouda)
15 slices of bacon, sliced in half (I used a peppercorn crusted bacon)
30 toothpicks
Turn your broiler on high. Fill each date with a cube of cheese. Wrap each date with a slice of bacon, and secure with a toothpick. Place a wire cooling rack on top of a cookie sheet, and place the dates on the cooling rack. This will help the dates to cook on all sides and let the fat from the bacon drip onto the cookie sheet. Broil on high for 8-10 min. or until the bacon is browning, but not too crisp.
