Let me tell you- this is a super easy way to cook fish- especially if you don't cook it very often and it intimidates you. This recipe could be used with salmon, tuna, swordfish, cod, etc. You do want to make sure it's a thicker cut of fish though, a thin fillet of whitefish might not hold up too well with this method.
I chose halibut - mainly because my fishmonger had a beautiful cut of it screaming my name - not because it was cheap (;
Make sure you use a pan that has a cover. I used a standard size frying pan, filled it with about an inch of water, covered it and turned the burner on high. When the water was bubbling, I turned the burner down to low, added some whole black peppercorns, three green tea bags and some fresh dill. Place your halibut steaks into the pan and cover. Let it cook on low for about 8-10 minutes.
If you're nervous about cooking fish, I'd urge you to give this method a try. I really do think it's foolproof!
