I started out the week continuing on my journey of experimenting with raw foods. I made raw chocolate brownies, which turned out more like fudge. Regardless, they were devine. I adapted this recipe, using vanilla and eliminating the almonds. I never realized how versatile dates were, but am learning more about how much they are used in raw "baking".
Tuesday I was in a giving mood and purchased the order of the car behind me at Starbucks. I think the guy behind the counter was more excited than I was to make her day. I hope one, or both of them, decided to pay it forward that day.
Later in the week I stopped in at Aquatic Advendures to fill out my paperwork for a scuba diving class I'm attempting to take. One of my biggest fears is drowning, so I feel like the best way to get over that is to submerge myself underwater (insert sarcasm here). I honestly was getting anxious just filling out the paperwork. I was hoping I could just schedule a night and go in. Apparently it doesn't work that way. Looks like my class won't be until October, so I have some time to get used to the idea of being underwater. That or scare myself even more. We'll see(;
I am currently in the process of making my first batch of Kombucha. I'm super pumped about this because I've been wanting to brew my own for quite some time. I had been buying it from my local grocer, but it was so pricey. I knew I could just make it myself. Hopefully in a couple weeks I'll have a success story to share with you!
Friday I met with a new friend. Lisa was introduced to me by a mutual friend that I went to high school with. Lisa is a fellow IIN'er (meaning, she attended the same school I'm currently enrolled at) and we had a wonderful afternoon. We talked food, school, futures and life. It was a delicious lunch with lovely company. Meeeting new people and networking is such an important part of life. You never know when you'll make a new friend and I'm thankful to have met Lisa, and look forward to many more lunches with her(;
Finally, today was spent celebrating good friends and new life. My dear friend Stephanie is due with her first baby in about a month. We showered her with love and, of course, delicious food! Here are a couple of pics from her special day.
Wherever you are in life, my hope is that you're finding new ways to be inspired. Whether it's trying new foods, meeting new people or beginning to get over a fear, you can find a new way to challenge yourself. I'm super excited
for this upcoming week. I'll attempt to get creative with the paintbrush, make some time for a date night with my hubby, educate women on the dangers of toxic chemicals in everyday products and work on another fear of
mine....heights!
