Did you hear that? No cooking required...at all.
The star of this salad is a rotisserie chicken, and then whatever else you have on hand. Even the dressing is simple....salsa and sour cream. Can't beat that!
Southwest Chicken Salad
1 store bought organic rotisserie chicken
5 c mixed greens
1 pint cherry tomatoes, halved
1 can sliced black olives
1 avacado, cubed
1 fresh jalepeno or 3 T canned jalepenos, chopped
1/4 red onion, sliced thin
1 c sour cream
1 c your favorite salsa
frozen or fresh corn, optional
Remove skin from chicken and take the meat off of the bones. If you don't want to make 4 salads, you can use half of the chicken for 2 salads and then use the other chicken for soup, enchiladas, etc.
Split the greens up evenly, top with all of the veggies and chicken. Mix together sour cream and salsa. Drizzle over the salad. Enjoy!
Anyone, and I mean, anyone can make this salad. It requires no cooking, and barely any prep. Despite all of the dinners I put tons of thought and time into, this is one of my husband's favorites. "I could eat this salad every night" he says (every time I make it). Fine by me.....
