One of my favorite things to grill is vegetables. Honestly, there aren't many that I can think of that don't taste delicious cooked on a grill. Here are a couple simple tips:
-Make sure veggies are bite sized or sliced thin enough so that they actually get tender on the grill
-If you have small pieces, use a grill basket like this one
-You can also make a foil packet for smaller veggies
-Make sure veggies either have olive oil, butter or some other form of coating so they don't burn
-Season before you grill
-Only grill until veggies are just tender. You don't want to overcook them, they should still have a little bite
Grilling vegetables is quick and easy. Not to mention, it gives veggies a taste you just can't get inside (even on the grill pan, although the grill pan is a close second)! If you're looking for a simple summer dish to whip up, consider cutting up your favorite veggies, or whatever you have laying around that needs to get used up. You really can't go wrong!
